Ms Steck and Dr. Rose Myers wrote Eating Your Way To Better Health as an easy-to-use guide for changing your diet, with well thought out menus and easy to follow recipes. The book includes lists to help you stock your kitchen with staples and a guide for equipping your kitchen for preparing healthier meals. It also includes sections on cooking grains and beans, helpful tips on food preparation and storage, and an easy to use spice and herb table. The recipes are in an easy to follow format and cover a large variety of complete meals including beverages and desserts.

Sara Sgarlat Steck is an avid body builder and trainer and has been a vegan for many years. Dr. Rose Sgarlat Myers, a physical therapist, is an author and an editor. Rose and Sara are of Sicilian descent and for most of their lives have cooked in the traditional Mediterranean style. They have both experimented with low-fat vegetarian cooking for many years.

Mexicano Salad

SHOPPING LIST

Beans
2 15-ounce cans black beans
1 15-ounce can garbanzo beans

Vegetables 
1 green bell pepper, diced
1 red bell pepper, diced
3 plum tomatoes, diced
1 1/2 cups frozen and thawed corn
3/4 cup fresh cilantro, chopped 
1 large red onion, finely-chopped 

Dressing
3 tablespoons seasoned rice vinegar
3 tablespoons apple cider vinegar
1 lime, juiced
4 garlic cloves, minced
2 teaspoons cumin
1 teaspoon coriander
1/2 teaspoon black pepper, freshly-ground 

PREPARATION
Drain, then rinse the beans in cold water. In a large bowl, combine the beans and the vegetables. In a small bowl, combine the dressing ingredients. Pour the dressing over the vegetables and toss gently. May be made in advance. Keeps well in the refrigerator. 

Prep time: 20-25 minutes. 

Serves: 8 to 10.
